200 gms Wild Rice, 200 gms Tuvar dal, 200 gms Mugni dal, 20 gms Ginger, 20 gms Garlic, 1 green chilli, 20 gms turmeric powder, 20 gms coriander powder, 20 gms cumin powder, 10 gms ghee, 100 gms tofu 20 grams asparagus, 10 grams cumin, a little coriander for garnish, sea salt.
Method:
Soak the wild rice in cold water overnight. Boil it in water for 1/2 hour in the morning. Soak both lentils in cold water for 30 minutes. Then add turmeric and bring to boil. Blend with a blender after it has risen. Take finely chopped ginger, garlic and green chillies. Marinate the tofu with ghee, cumin powder, coriander powder, turmeric and sea salt. Then take a pan and add ghee, cumin, finely chopped ginger, garlic, chilli. Saute for 10 minutes. Then add turmeric, coriander powder and cumin powder to the mixture. Add salt on top. Now take a separate pan and fry the marinated tofuz in it till it becomes crispy. Top with asparagus and garnish with coriander. The dish is ready to serve.
Chia seed pudding
1 cup unsweetened almond milk, 1 cup plain Greek yogurt, 2 tablespoons pure maple syrup, 1 teaspoon vanilla extract, 1/2 cup chia seeds, 1/2 cup roasted almond slices, 1 cup chopped strawberries, 1 cup blueberries, 1 cup purple, sea salt to taste.
Method:
In a medium sized bowl, add almond milk, yogurt, 2 tablespoons maple syrup, vanilla extract and 1/2 teaspoon salt and blend properly. Now pour this mixture on the chia seeds and set aside for 30 minutes. Shake the mixture lightly if the seeds are set in one place. Now cover this mixture and put it in the fridge for the night. Now add strawberries, blueberries and jaggery in the sugar syrup to make the mix marmalade till it is half boiled. The next day, in a medium size bowl, add the remaining maple syrup from the berry jam and mix. Then mix the nuts in that stuff. Now put the pudding in 2 glasses and serve by pouring the berry marmalade upside down in the glass.
